Chickpeas need soaking in plenty of water for 8 -12 hours before being cooked. Some people add a teaspoon of bicarb (per 500g dried chickpeas) to the soaking water which will further help the softening process. They will expand considerably through cooking so cook in water (best salted and maybe chuck in a bay leaf and a garlic clove) or stock at least twice the volume of the chickpeas. Simmer for 45 mins to an hour.

Chickpeas (also known as chana, gram and garbanzos) are highly nutritious. They will hold their shape when cooked (the skins may float off and you can eat them too -very good gut microbe food!- or discard if you don’t like them) so are great for salads and side dishes as well as roasting and in hot soup and stews and curries. Also well known when pureed with tahini in dips such as hummus.

All dried food orders are packed in home compostable brown paper bags. Some food items contain natural oils which may be absorbed by the brown paper bags. Some natural oils may seep through onto other items. We recommend putting your dried food items in airtight or semi airtight containers to retain freshness.
