An excellent general use white bread flour. 11% protein. Great mixed with wholemeal flours and used in sourdough as well as yeasted loaves.
Stoneground flour (as opposed to the more usual ‘roller milled’ flour) is milled by grinding the whole wheat grains between two large stones (often granite). The flour that is created is a wholemeal flour – it contains the whole grain. To make a white flour from this, the flour is sifted to remove the larger bran (brown) particles. There are nutrition and health advantages of stone-ground white flour because many of the nutrients found in the brown ‘outer layers’ of the grain are physically ground into the white part while being milled (eg Vitamin E).
By contrast, roller milled flour goes through a process where the whole grain is stripped layer by layer of its nutritious outer parts between big steel rollers – these particles are removed during the process. This leaves the remaining inner white part to be made into flour – perfectly ok flour, but without any of the oils and nutrients found in the rest of the grain.
