No need to soak. Gently boil in stock or salted water (with a few herbs – try a sprig of thyme or a bay leaf, or a splash of red wine too) for 20 minutes or so. Or sauté onions and garlic and other veg then stir in the dry lentils and pour stock on top – simmer for 20 mins.

A really adaptable and popular lentil as they mix so well with other ingredients, are flavoursome, have good texture and are straightforward to cook. Can be used in all sorts of hot dishes but also excellent in salads. Strange though it may sound, these lentils go well with a baked salmon!

Some natural oils may seep through onto other items. We recommend putting your dried food items in airtight or semi airtight containers to retain freshness.
