This is a wholemeal rye flour used to make dark rye breads or blended with white flours to add great taste and texture to a loaf. Dark rye is also traditionally used to make the ‘sponge’ for rye loaves and is often used to make a rich, tangy, active sourdough starter
The addition of dark rye flour can speed up the pace of fermentation in sourdough loaves – so keep a close eye if you are new to using it in a sourdough loaf.
